In the red wines, the jar eliminates notes of greenery and astringency, leading the result to ripe flavors of fruit, minerals and without reducing effects. It reduces the astringent part and bitterness of the tannins, stabilizing the aromatic fraction and significantly improving the perception of aftertaste. The wine, consequently, does not lose its primary aromas but deepens its maturity qualities. Its fructity becomes qualities of compotent fruit and a lot of minerality.
